Heavily influenced by its religious and historical legacies, Ukraine is a land ripe for adventure. The birthplace of Russian Orthodoxy and home to no fewer than seven UNESCO World Heritage Sites, Europe’s second largest country (actually its largest if you don’t count Russia) is actually one of the continent’s least visited destinations. Brash, colourful and richly diverse, Ukraine is made up of a mix of fertile plains, plateaus and rivers that lie within the dominating shadow of the mystical Carpathian Mountains.
A country of over 42 million people, its historic antecedents go back to the Byzantines and the Renaissance, a rich legacy that has gone on to bear fruit amongst the monastic architecture of Kyiv and the captivating cobbled streets of Lviv. Amongst the rugged landscapes of the Carpathians you can find the largest populations of brown bears, wolves and lynxes in Europe, along with the distinctive cultural traditions of the Hutsuls, whilst the Black Sea region offers up a chance to discover the elegant 18th architecture of Odessa. A spectacular contrast of medieval Orthodoxy, Soviet realism and traditional Tatar traditions, Ukraine offers up some of the most authentic and fascinating travel experiences anywhere in Eastern Europe, along with a quintessentially European flair.

Food and drink
The national dish of Ukraine that undeniably originates from the country is borsch. However, varenyky and holubtsi are also considered national favourites of the Ukrainian people and are a common meal in traditional Ukrainian restaurants. Often referred to as the “breadbasket of Europe” the Ukrainian cuisine emphasizes the importance of wheat and grain to the Ukrainian people and its often tumultuous history with it. The majority of Ukrainian dishes descend from ancient peasant dishes based on plentiful grain resources such as rye as well as staple vegetables such as potato, cabbages, mushrooms and beetroots. Ukrainian dishes incorporate both traditional Slavic techniques as well as other European techniques, a by-product of years of foreign jurisdiction and influence.
